Ergonomically designed by award-winning custom knifmaker, Ken Onion (born 1963), the Sonoma knife set includes the basics: 3" paring knife, 5" utility knife, 7" santoku, 8" chef's knife, 9" bread knife and 10" carving knife, plus a sharpening steel and a bamboo storage block with slots for 11 items. The knife set is made in Japan.
Onion made his fame after designing the "SpeedSafe" assisted opening mechanism for Kershaw Knives. The ex-Marine holds 36 patents.
Amazon is also selling the knives. They are offering a 3 piece set for $372. The company also sells knives individually. The 11 piece set is currently unavailable on Amazon.
The knives have specially shaped handles that bolster the position of your fingers. They are used by professional chefs giving them greater control while reducing hand and arm fatigue. The knives are made of the same VG-10 high-carbon steel featured in the Shun Classic line.
