Use both celery and the seeds, as different parts of the plant contain different anti-inflammatory aids. Celery stalks are high in mineral content, including potassium. A deficiency of potassium may exacerbate symptoms of arthritis, so eat your celery.

Celery seed tea should be freshly made, using a teaspoon of celery seeds to a cup of boiling water. Cover and steep for fifteen minutes, then strain and drink. For acute arthritis, drink three times daily.
